Ageing and conservation
The first fermentation is done in stainless steel buckets, with temperature controlled between 14 ° and 16 ° C. Between 10 and 12 days after the first fermentation, the base wine is ready for the coupage and bottled where the second fermentation will take place between 10 and 14 months.
