ORIGEN
Central Valley. 100% Chardonnay
VIÑEDS
Soils: They are of alluvial origin, medium textures, frank sandy and well drained. The land is flat, medium depth and moderate fertility.
Climate: The climate is sub-humid Mediterranean. Winters are mild, dry and tempered summers and cool nights. All of the above ensures the production of healthy grapes, of delicate texture and accentuated aroma. It has an average annual precipitation of 350 mm.
VINIFICATION
Reception: The harvest was performed manually in 500 kilo bins. Once the grapes were selected, the complete clusters were placed directly in the pneumatic press.
Fermentation: This was made in stainless steel buckets for 15 days at temperatures between 16° and 17° C, to maximize varietal aromas and tastes. Once the first fermentation was finished, the wine was clarified and stabilized. Immediately, the “throw flange” was added and the second fermentation was carried out by the “Charmat” method, remaining up to 40 days on its lees.
DESCRIPTION OF THE PRODUCT
This wine produced by the method “Charmat” was made with Chardonnay grapes from our vineyards in the Central Valley. It is golden and has a fruity and pleasant aroma. In the palate it is fresh and fertilized. It is ideal as an appetizer or accompanied by any entry plate. Enjoy it also in all celebrations. Serve it cold.
